Dinner started off with Amuse Bouche which consists of a variety of bite-sized canapes from the kitchen.

First up, Scampi e Fegato d’oca - charcoal grilled langoustine on top of aged foie gras drizzled with kombu and ginger dashi. The lobster meat was succulent and the accompanied foie gras and dashi served to elevate the dish even further. Delizioso!

A litmus test for Italian restaurants is the pasta and Zafferano’s Tagliolini passed with flying colors. The house-made ‘Tagliolini’ Pasta with hikka squid and kaluga caviar was full of flavour yet not overpowering. The squid was soft and done-ness perfect.

The first main dish was the Parago - Japanese red sea-bream, with an assortment of vegetables served with a Mediterranean sauce. The fish is well-cooked and the accompanying vegetables kinda remind me of the Légumes Magician from the anime Shokugeki no Soma. Mixing each bite of fish with a different vegetable brought out different textures and flavours to thrill the senses.

The second main dish of the evening was Manzo Giapponese - A4 ‘Kagoshima’ wagyu beef striploin, romanesco with ‘Karashi’ bearnaise sauce. My preferred done-ess is usually medium or medium-well, but as recommended by the serving staff, we had the beef medium-rare. And what a surprise it was, there was no bloody taste and the striploin was bursting with jus while the edges were crispy chars. Beautifully executed!

To end of the dinner, Gianduia for the dessert, which is ‘Araguani’ dark chocolate, gentile hazelnut and ron zacapa 23. A safe combination which can rarely go wrong, however what stood out for me is the pairing of the various small sides with the chocolate hazelnut to bring out more depth in the dish.

An extra bonus not part of the dinner 3 Petitte pastries - madeleine, tart, macaron. The madeleine is probably one of the best executions I have tasted in the past couple years, the edges are crisp while inside flavourful and not overly dense. The black sesame macaron was a pleasant surprise, a tinge of saltiness to balance off the sweetness from the tart.

Zafferano Dessert

I would most definitely recommend Zafferano. The service is top notch, the well-balanced flavours and textures of the Japanese influenced Italian food are truly amazing. If you have a Citi Prestige card and snag the Haute Dining deal, it is a must try.
