Summer Pavilion is a popular 1-Michelin star restaurant located at The Ritz-Carlton, Millenia Singapore which serves contemporary Cantonese cuisine. After reading about Chef Cheung Siu Kong’s repertoire of exquisite dishes in various blogs and reviews, we managed to snag the Haute Dining deal to check out for ourselves.

The interior is modern and cosy with elegant furnishings. After being ushered in and seated, the first thing one would notice is the pretty chinaware laid out before you!

The dinner started off with Barbecued Iberico Pork, Honey Sauce and Pan-fried Hokkaido King Scallop (酱烧⿊豚⾁,⾹煎带⼦皇). Despite the cut of pork was on the leaner side, it was tender and juicy. Adding the slice of reddish below the scallop is brilliant as it added texture and elevated the dish.

Next up is the Double-boiled Sea Whelk Soup, Fish Maw, Chicken, Soaked Nostoc Algae, Servedin Whole Coconut(椰皇花胶响螺珍珠藻炖鸡汤). The soup was absolutely delicious and full of sea richness without any fishiness.

The meat dish is the Pan-fried Japanese Wagyu Beef, Wild Mushroom (⾹煎⽇本特级和⽜) is tender but a tad oily, even though the beef itself did not have pockets of fat.

For the veg dish, we were served the Braised 3 Head South African Abalone, Mushroom, Chinese Cabbage in Oyster Sauce (蚝皇 3 头南⾮鲍⻥花菇⽩菜苗). This was perhaps the weakest dish of the night, I felt the abalone was not well braised and rubbery.

The final dish before dessert is the delicate Poached Rice, Canadian Lobster Meat, Lobster Broth (加拿⼤⻰虾西施泡饭). The play of textures (with crispy) the rice is delightful and balanced perfectly with the fresh succulent lobster and clear stock. Be warned though, the MSG in the superior stock may leave you thirsty afterwards.

Dessert is a contemporary interpretation of the local classic Pulut hitam - Chilled Black Glutinous Rice, Coconut Ice Cream (⾹芒紫⽶冻). The flavours is balanced and not too sweet, a great way to end off dinner.

The Summer Pavilion with its beautifully presented exquisite food, awesome ambiance, warm and friendly service is definitely worth the experience! I will most certainly be back to try their other dishes.
