Prego @ Fairmont Singapore

Located on the first floor of Fairmont Singapore, Prego is one of my favourite go-to places in town when I have cravings for Italian food. The restaurant décor is rustic Italian and guests enjoy natural lighting from the windows along the sides of it.

Earlier in May, we celebrated a friend’s birthday at Prego since he has never been there before and partly because I needed a pizza fix since California Pizza Kitchen closed during the Circuit Breaker last year.

Shortly after our orders were taken, the serving staff brought us a complimentary plate of warm olive focaccia bread.

First appetiser served is the Carpaccio di Manzo - thin sliced beef tenderloin, lemon mushroom salad, arugula, crispy parmesan. I enjoyed the mixture of the toppings, however the beef slices is sliced too thin. Coupled with this dish being kept chilled before taking out to server, results in the beef being glued to the plate and unnecessary tedious to dislodge each piece from the plate for sharing.

Next up is Calamari Fritti - deep-fried squid rings, arugula, garlic, chilli which is decent.

My favourite appetiser would be the Pomodori e Burrata - burrata, datteini salad, pistachio nuts, basil oil. The cheese was creamy and delicious, it paired well with the nuts and salad.

Before the pizzas arrived, we dug into the Lasagne alla Bolognese - bologna style oven baked lasagne. I feel that what separates an Italian restaurant from good, decent or mediocre is how well they execute the classic Italian dish the lasagne. And in Prego’s case, this dish did not disappoint. It is executed perfectly!

Prego offers an option to have 2 different types of pizza on each half of a pizza board (if the bases are the same - i.e. both types must either be tomato or cream based). An excellent option for sharing and trying out more flavours among friends.

For the cream based pizza, we had the Prego - ham, mushrooms, sun-dried tomatoes, mozzarella, cream, parmesan; and 4 Formaggi - mascarpone, gorgonzola, parmesan, tomatoes, mozarella. The combination of the 4 cheeses is delightful, while the ham and mushrooms was by no means bad, but perhaps less interesting.

The tomato based pizza we ordered was the Curdo - parma ham, aragula, buffalo mozzarella, tomatoes; and Rustica - house-made sausage, pepperoni, mushrooms, onions, capsicums, tomatoes, mozzarella. I am partial towards parma ham pizzas and this one is delectable. There is nothing to fault with the rustica and it is delish as well.

Service is great, staff are warm, friendly and knowledgeable of the menu items. While prego’s prices are on the higher end, the food quality is certainly worth it. I look forward to my next visit.
